Growing up, my parents used their pressure cooker often. You know the one, a big metal contraption with a stopper that would dance around and make noised. The kind of machine that you gave a wide berth incase it blew up, haha!

When I saw that the pressure cooker was out, I did my best to get an invite to a friends house. I was the pickiest eater, I don’t know how they put up with me (oldest of 5 kids).

My tastes have matured and these days I am a true carnivore, I love every type of meat there is! Well, except for duck, maybe one day.

If you enjoy beef and want something different vs ground beef or steaks, give this chuck roast a go. It’s loaded with protein and so versatile!

What is Chuck Roast?

  • The cut of beef referred to as chuck roast is a popular & flavorful. Typically weighing between 2.5 and 5 pounds.
  • Known for its versatility, chuck roast is a less expensive marbled cut of beef. When seasoned and cooked well, it’s delicious! I make amazing Beef Enchiladas using a chuck roast. The flavor is off-the-hook!

What to make with Chuck Roast?

  • Chuck roast is great for making soups, stews and things with shredded beef. Popular recipes include Crock Pot Pot Roast, Italian Beef Sandwiches and Goulash Soup
  • Cube the chuck steak and make beef pot pies, chili, beef stew, smoked burnt ends and more!
  • Grind it to make burgers, meatloaf, stuffed peppers or stir fry’s. I love grinding my own chuck roast and only passing it through once for a nicer texture than what I typically find from the grocery store.
  • Slow braised chuck roast on the stove or in a crock pot makes great birria tacos, pot roast, shepherd’s pie, tacos, beef ragu and more.

Ingredients

  • Onion
  • Chuck roast
  • Avocado oil or olive oil
  • S&P
  • Garlic & onion powder

How to cook Chuck Roast in oven

  • You can do this simple or a little more complicated, your choice.
  • Place a little avocado or olive oil in your Dutch oven or roasting pan.
  • Option 1 is to pat your meat dry, rub on a little bit of avocado or olive oil and then season your chuck roast all over with kosher salt & black pepper as well as some garlic powder and onion powder. (If you have garlic paste, first rub it down with that. Gives a nice flavor).
  • Slice a large onion into thick ½ inch thick slices, and place those in your Dutch oven or roasting pan and season those with S&P.
  • Place your chuck roast atop the onions, place the lid on and roast at 325 degrees for 3 hours (for a 2 ½ pound piece).
  • Option 2 For a more robust crust, first sear all sides of your chuck roast in a very hot pan until crisp then continue on placing it atop the onions and roast for about 2 hours and 40 minutes at 325 degrees or until meat is tender enough to pull apart.

Variations

  • You can choose to cut a larger piece of chuck roast into half or thirds and do either method above. Cook time will be less.
  • Change up seasoning, maybe some Cajun seasoning, Montreal seasoning, Italian seasoning, Mexican seasoning or a spice blend of cinnamon, cumin and coriander.
  • Add in a cup or two of a full-bodied red wine for some braising liquid for a different flavor.
  • Swap onion slices for thick slices of leeks.
  • Add carrots and celery to the bottom of the Dutch oven for more aromatics.
  • Chuck roast responds really well to Birria seasoning, these Birria Seasoning Bombs that you can get on Amazon and in some grocery stores are awesome!
  • If you like to use a crock pot, switch from the oven to that. Depending on your heat level it may take additional time.

Once you get the cook of this down, you’ll find its one of those meals you can quickly prep, toss in the oven, crock pot, or pressure cooker and go about other things while dinner mostly tastes care of itself.

Tips

  • Look for a thick cut of meat with decent marbling, about an inch thick.
  • Season the whole roast, don’t forget about the sides. All 4 sides 🙂
  • If you like crispy bits, you can always shred the chuck roast, mix the juice and onions into it, season just a little more (if you feel it needs it) and pop it back in the oven at 400 degrees for 10-15 minutes to crisp up a bit. I usually don’t bother, its up to you and how you are using it.
  • If your can easily pull apart the meat with two forks, its done. If not put the lid back on and bake another 20-30.

Ingredients  

  • 2.5 pound chuck roast can be larger or smaller
  • 1 large Vidalia onion or white onion
  • 1 TBS avocado or olive oil approximate, will vary based off chuck roast size and Dutch oven / pan size
  • 1 TBS Kosher salt approximate, will vary based off chuck roast size and salt tolerance.
  • 2 teaspoons black pepper approximate, will vary based off chuck roast size
  • ½ TBS garlic powder (or garlic paste, see notes) approximate, will vary based off chuck roast size
  • ½ TBS onion powder approximate, will vary based off chuck roast size

Instructions 

  • Pat chuck roast dry, put a little drizzle of avocado or olive oil on it and rub it all over with your clean hands.

  • Season well on all sides with kosher salt, black pepper, garlic powder and onion powder. Allow the roast to sit on the counter to take some of the chill off for 30 minutes.

  • Place a little oil in the bottom of your pan / Dutch oven.

  • Slice your onions into ½ inch thick slices or so, season with S&P and place them into the pan. Set chuck roast atop the slices.

  • Preheat oven to 325, place lid on your Dutch oven / roasting pan (or cover pan tightly with foil). and roast for 2.5-3 hours (depends on weight and thickness of meat).

  • You will know its done when a fork can easily shred the meat.

  • Swirl meat into any juices and the onions. Taste and season a little more if necessary.

Notes

I am OBSESSED with always having a few tubes of Gourmet Garden Garlic Paste on hand. If you are too, or want to try it (its in the refrigerated produce section near the herbs) use it to rub all over the roast before seasoning.

If you meat is under 2.5 pounds, cook time may be less. If your meat is over 2.5 pounds cook time may be longer. Test, if it does not pull apart easily with 2 forks, put it back in the oven lid on for an additional 20-30.
