This La Scala Chopped Salad recipe is an easy summer meal or side dish, and is thrown together in just 5 minutes. With shredded iceberg lettuce, chickpeas, Italian salami and mozzarella, smothered in a delicious olive oil, vinegar, mustard and parmesan dressing.

- If it’s good enough for Kim… This La Scala Chopped Salad, from the famous Beverley Hills La Scala restaurant, actually went viral last year. And the Kardashians being big fans had a lot to do with it. I do love the ease of a chopped salad, and this one is so moreish. Even better when eaten in the sunshine.
- So easy to make: You can literally throw this chopped salad together in 5 minutes. Perfect if you need a last-minute lunch or BBQ side dish for a gathering. It’s naturally gluten free and packed with flavour.
- A note on ingredients: The famous La Scala salad uses Italian salami whole sausages which are finely chopped. In the UK this is harder to find so I’ve used easily accessible Italian salami slices. You’ll see US recipes for La Scala chopped salad use garbanzo beans instead of chickpeas – but these are the same thing!

Ingredients and Substitutions
There’s a printable recipe card below for this viral chopped La Scala salad recipe with the full quantities. But here are the main ingredients and ideas for any swaps:
- Lettuce: I use iceberg lettuce like La Scala restaurant, but some people prefer Cos or Romaine lettuce. Any crunchy lettuce will work, as long as it’s shredded finely.
- Salami: Make sure you get Italian salami! I use the Sainsbury’s Milano Salami Slices – traditionally the recipe uses chopped Italian salami sausage but I found this hard to source in UK supermarkets.
- Mozzarella: For ease I use bags of pre-grated mozzarella cheese, but you can also use shredded mozzarella made from grating a harder block of this cheese.
- Chickpeas: Also known as garbanzo beans. Use tinned chickpeas for speed.
For the La Scala salad dressing you will also need:
- Olive Oil
- Red Wine Vinegar: Yes, this is gluten free – check my gluten free vinegars guide here.
- Dijon Mustard: This is usually gluten free but always double check.
- Garlic Paste
- Parmesan Cheese: Or any finely grated hard Italian cheese.


How to Make the La Scala Chopped Salad
There’s a printable recipe card below with the method. But here are some step-by-step photos to show you how easy this La Scala Chopped Salad recipe is to make.
Add all the dressing ingredients together in a small bowl, along with a generous seasoning of salt and black pepper, and whisk together with a small whisk (or fork).
You can also pop them in a small tub with a lid and shake to combine, which is handy if you want to make this ahead of time, or make extra dressing for later.


Add the lettuce, salami, chickpeas and mozzarella to a large bowl and mix together well.
Pour the dressing over the salad, toss to coat then serve straight away. If making ahead of time, make the salad and dressing and store in the fridge separately. Mix before serving.
