These air fryer Indian samosa pinwheels are such a fun twist on the classic popular Indian snack of vegan samosa. They have got that same delicious spicy potato and peas filling we all love, but in an easy, bite-sized pinwheel form. Looks good too.
It is also way quicker and ideal for meal prep. I have used store-bought puff pastry sheets here making the recipe even quicker.
These samosa pinwheels are perfect for potlucks, game day parties, get-togethers or even as an appetiser for your Diwali party or on your charcuterie tray. The air fryer makes them golden and crisp much faster, which means less mess and fewer calories but all the same flavour.

I usually make these with puff pastry when I want them flaky and indulgent, but they turn out equally nice with leftover rotis or tortillas for a lighter version. Serve them with green chutney or ketchup, and they disappear fast.
You will also love: kachoris, onion bhajis, cabbage pakoda, mirchi bhaji and aloo pakora.
Ingredients
Potatoes: I have used 2 medium boiled potatoes that have been mashed for the samosa filling.
Green Peas: They lend their classic flavour to the filling.
Ginger and Green Chilies: Give the filling flavour and a gentle heat. Adjust spice to your liking.
Spices: Garam masala, ground coriander, amchur, chaat masala and red chili powder spice up the filling perfectly.
Puff Pastry: A lovely flaky envelope for the tasty samosa filling.
Garnish: I have used chopped cilantro in the filling.
Oil: I used a little olive oil when cooking the samosa filling.


Instructions
Start by making the filling. We need boiled potatoes. I have used pressure-cooked potatoes done in manual pressure cooker. You can do them on the stove or cook in instant pot. Peel, mash and keep aside.
Heat oil in a pan, add cumin seeds, and let them sputter. Add finely chopped ginger and green chillies and saute lightly for a minute.


Add green peas and cook for a couple of minutes till they soften. I have used ½ cup green peas that have been microwaved for a couple of minutes to thaw them.


Then add mashed potatoes, spices and salt.


Mix well until everything comes together. Finish with lemon juice or amchur and chopped cilantro leaves. I also add chaat masala for extra tang. You may skip if you don't have.


Let the filling cool completely before you begin to assemble the pinwheels. For the outer covering, thaw vegan puff pastry sheet in the fridge. Keep it cold at all times.


To begin assembling, carefully unroll the thawed puff pasty sheet. I took half of it and rolled it out slightly using a rolling pin to make it thinner. Take your cooled filling. You can mash the peas too if you so like.


Spread the potato filling evenly across the pastry, leaving a small border around the edges. Roll it up tightly like a log. I had a bit of extra pastry on the edges that I snipped off later.


Now put the log in the freezer for 10 minutes. This helps in making it firm to enable easy slicing.
Slice the roll to about ¾ inch thick slices using a sharp knife. These are your samosa pinwheels. I loved the triangular shape. You can slightly flatten them into ovals using your palm. Each log can be cut into about 16-20 sliced pinwheels. You can double the recipe to make more.


Preheat the air fryer to 200C or 400F for 4 minutes. Place the pinwheels in a single layer in the air fryer basket. Do not let them touch each other.


Air fry for 10-12 minutes at 200C or 400F, flipping them midway through, until golden brown and crisp on both sides.


Your tasty puff pastry samosa pinwheel is ready to serve. Serve with green chutney or ketchup and enjoy them hot.


Expert Tips
- Slightly rolling out the puff pastry helps in keeping the layer to filling ratio even.
- Puff pastry must be chilled at all times when you are working with it. If it gets hotter, just place in the freezer to chill before using.
- You can make the samosa filling ahead of time and store it in the fridge for up to 2 days.
- Samosa filling must be completely cooled before you begin to fill it.
- Roasted and powdered fennel seeds can be used in the filling for a delicious signature taste. I had run out of it this time.
- Best served fresh and warm. If you have leftovers, reheat in the air fryer for 3 minutes at 200C or 400F before serving.
- If you make extra pinwheels, you can freeze and store in the freezer for upto 3 months. Air fry straight from frozen.
- You can bake these pinwheels in oven by placing them on a baking tray lined with parchment paper or baking sheet. In a preheated oven at 200C or 400F, bake for 20 to 25 minutes till golden and crispy.
Variations for Fillings
1. Add crumbled tofu or soy for a protein-richer filling.
2. You can also used mashed lentils or chickpeas in the filling in place of potatoes in the filling.
3. You can add sauteed chopped vegetables like carrots, peppers, cabbage, mushroom, beet and corn in the filling along with the spices along with grated vegan cheese.
