Look at the richness and contrast of this gorgeous dish of Eggs & Black Beans in Spicy Tomato Sauce which is my take on the North African dish Shakshouka . And boy was it different and good!

I had heard about Shakshouka years ago from a Bon Appetit Magaizine I think and knew it was something I wanted to try. I changed it up to my liking and came up with this Eggs & Black Beans in Spicy Tomato Sauce.
I decided to switch out the traditional chickpeas for black beans since I knew we’d enjoy them more. You can use homemade Roasted Tomato Sauce (this is a sheet pan recipe, so easy and I swear by it) or store-bought. If using store-bought sauce, look for a nice dark, robust sauce.
This black beans & eggs recipe is a 20 minute meal. Make it for breakfast, lunch or for a light dinner.
If you are not a fan of black beans, leave them out it’s still delicious! I scoop the eggs and sauce up with crispy bread or toast, mmm!
Ingredients
- Tomato sauce
- Black beans
- Feta cheese
- S&P
- fresh herbs like parsley, cilantro, scallions etc. Optional.
This easy eggs and beans recipe has a number of variations. It’s easy to make it your own dish.


Variations
- Swap black beans for lentils, or chick peas which makes it a Mediterranean Shakshuka. Or white beans.
- If feta cheese is not your thing, top with shredded provolone cheese, shredded mozzarella or shredded Parmesan. I especially enjoy dropping chunks of Parmesan in just before adding the eggs allowing them to melt, mmmm!
- Make this tame or as spicy as you wish. I often add some homemade Fire Salt to season the eggs and sauce it for a spicy kick. You can also add red pepper flakes, cayenne pepper or a diced fresh hot pepper.

Black Beans and Eggs Skillet
Beans for breakfast? Yes, with eggs in a spicy tomato sauce. This is a delicious way to start your day!
Ingredients
- 2 TBS grapeseed or olive oil
- ½ cup chopped Vidalia onions
- 2 cloves garlic minced
- 2 cups tomato sauce or more, depends on pan size. You want an inch of sauce
- 1 teaspoon paprika
- ½ teaspoon cumin if you enjoy the taste, if not leave it out
- dash red pepper flakes or cayenne pepper if you enjoy spicy
- 1 cup black beans drained and rinsed (or more)
- 4 eggs
- fresh parsley or basil for garnish
- ½ cup Feta cheese crumbled
Instructions
In a skillet, sauté onions for 2 minutes, add in garlic and sauté for 1 minute more. Just until the garlic is fragrant but not browned.
Add in the sauce and seasonings, stir to combine.
Bring to a low simmer, reduce heat and add in beans.
Fry your eggs sunny-side up, season them and top the sauce with the eggs alternately you can also slide your eggs into the sauce one by one, season cover with a lid and simmer until cooked to your liking.
Top with Feta and parsley or basil and serve with warm crusty bread.
Notes
