Honey Walnut Prawns

One of my favorite dishes when eating at Chinese restaurants is the Honey Walnut Prawns. I love fried shrimp, plus the sweet sauce with candied walnuts is just mouthwatering. I made this for the first time a few days ago using my Dad’s recipe and was excited to find out how easy this was to make.  This dish goes great with some steamed broccoli and rice.

Honey Walnut Prawns (recipe from Dad)


Yields: 4 servings (about 7 pieces per person)

Ingredients:

  • ½ lb shrimp, thawed and deveined
  • ¾ cup candied walnuts (check out our recipe here)
  • ⅓ head lettuce for garnish (optional)
  • Sesame seeds for garnish (optional)

Shrimp Marinade:

  • ½ tsp salt
  • 2 egg whites
  • 3 Tbsp cornstarch
  • 1 tsp lemon juice

Sweet Sauce:  (If you don’t like it too sweet, you could lessen the amount of condensed milk)

  • 3 Tbsp mayonnaise
  • 3 tsp condensed milk
  • 2 tsp honey
  • 1 tsp lemon juice

Directions:

 

1. Make walnuts. Check out our post on how to make candied walnuts.

2. In a small bowl, combine marinade ingredients and mix together until mixture is smooth. Add uncooked shrimp and coat. Set aside.

3. In another bowl, combine ingredients for the sweet sauce. Set aside.

4. Heat 1 cup oil in a small pot. Add marinaded shrimp one by one, about 2-3 at a time. Fry until golden brown. The shrimp should float to the top of the surface. Remove shrimp onto a plate with a paper towel. When all the shrimp has been fried, toss the shrimp together with the sweet sauce until coated. I think my sauce turned out a little sweeter than I’d like, so for next time I might cut down on the condensed milk.

5. (Optional) Slice lettuce into ½ in pieces and place on a serving plate.

6. Add prawns on top of lettuce, and add the candied walnuts on top and around the prawns.  Optional: sprinkle some toasted sesame seeds on the entire dish. Enjoy!
