My recipe for Crockpot Chicken and Stuffing tastes and smells just like Thanksgiving dinner! This recipe will be one of the easiest comfort foods you ever make. Pile a handful of ingredients into the crockpot and come back to a soul warming meal that totally hits that comfort food spot!

In all honesty, this is one of my favorite recipes. I don’t make it that much because I always feel like I’m cheating my healthier lifestyle somehow. It tastes THAT indulgent. I like to make a batch of mashed potatoes, Homestyle Cauli-Tater Mash OR Roasted Garlic Cauliflower Mash followed by a big ol’ spoonful of chicken and stuffing! Ohmylanta! Heaven on a plate, y’all. Heaven on a plate.
There’s more to Crockpot Chicken and Stuffing that makes it amazing than just the taste.
1. It’s one of the most simple recipes to throw together and put in the crockpot on a busy morning, so you’ll have total comfort food to come home to.
2. When you walk in the door, your house will smell like you’ve been making Thanksgiving Dinner… and if you’ve had a bad day, you’ll forget about it within moments.
Ingredients for Crockpot Chicken and Stuffing:


- 1 medium yellow onion, diced
- 2-3 ribs of celery, diced (about 1 cup total)
- 2-3 large carrots, diced (about 1 cup total)
- 1 box of stove top stuffing mix (lower sodium or regular will work)
- 2 cans of 98% fat free condensed Cream of chicken soup (cream of celery, cream of mushroom soup, or a mix of two will work)
- 1 cup chicken broth
- 2 lbs boneless skinless chicken breast or boneless skinless chicken thighs
How to make Crockpot Chicken and Stuffing:
- In a bowl add carrots, onion, celery, cream of chicken soup, and one box stove top dry stuffing mix.
- Spray crockpot with cooking spray.
- Place chicken breast in the crockpot and then pour chicken broth over it.
- Now spread the stuffing mixture across the top. Press it down just a bit.
- Now turn the crock pot to low and cook for 6-7 hours.
- Sit back & relax, go to work, go apple picking, or whatever your heart desires then come back to this!
- When it has finished cooking lightly shred the chicken with two forks and gently mix it together. Salt and Pepper to taste.


Now truth be told, this not the prettiest recipe, but what it lacks in looks it makes up more than enough in flavor. I promise.

Storage & reheating:
Crockpot Chicken and Stuffing reheats well in the microwave! Put it on a plate or in a bowl and cover with a lightly damp paper towel. Reheat for 1-2 minutes depending on microwave. I love leftovers of this meal. In a container with a tightly closed lid it should stay good for 4-5 days.

Chicken breast and stuffing slow cooked in a crockpot for the ultimate comfort meal.

- 2 10.5 ounce cans 98% fat free cream of chicken soup
- 1 box Stove Top Stuffing for chicken
- 1 cup low sodium chicken broth
- 2 lbs boneless skinless chicken breast, uncooked
- 2-3 ribs diced celery (about 1 cup)
- 1 medium diced yellow onion
- 2 -3 large diced carrots (about 1 cup)

Turn the crock pot to low and cook for 6-7 hours.
When it finishes cooking lightly shred chicken into bigger or smaller pieces. Chicken should be totally fall apart.
