Ingredients
For the Puff Pastry
Frozen Puff Pastry Sheets: These are available in the frozen section of your grocery store or online.
Thaw them in the fridge before using.
For the Egg Filling
Eggs: I have used 3 hard boiled eggs here for 6 puffs. You can boil eggs in air fryer or boil them the conventional way.
Onions: 2 large onions are used for the tasty filling.
Spices: I have used turmeric powder, garam masala, black pepper, paprika and salt to flavour the onions.
Ginger Garlic Paste: I used 1 teaspoon for a nice depth of flavour.
If you don’t have this paste, you can use freshly minced ginger and garlic.
Olive oil: This is used for cooking the onion filling.
For the Brushing
Egg Wash: I used one whipped egg white for brushing the puffs before air frying for a beautiful golden colour.


Variations and Substitutions
Vegetarian/Vegan: Swap the egg filling with a spicy mixed vegetable or tofu scramble.
Use vegan puff pastry and brush with plant-based milk for a vegan version. You can try these mushroom puffs in air fryer.
Gluten Free: Use gluten-free puff pastry sheets for a gluten-free version.
Change Protein: You can also switch the egg with chicken, shrimp, mushroom, tofu or even paneer depending upon what you are in the mood for.

Instructions
Start by hard boiling the eggs. You can do air fryer boiled eggs or boil them on stove.
Cool and peel them. Set aside.
Assemble the ingredients for the filling.
Make the Filling:
Finely slice 2 onions and keep aside.
Heat a pan. Add oil.
Add finely sliced onions along with salt to release water.


Sauté them till they get soft. I sauté them for about 5-7 minutes on low heat till they become golden.


Add 1 tsp. ginger garlic paste and sauté them further till raw smell goes from the paste.
Add a couple of tsps. of water if the mixtures starts sticking to the base.
Now add the spices: turmeric, garam masala, Kashmiri red chilli or paprika and pepper.


Mix well.


Turn off the gas and cool the filling completely before using.
Assemble the puff
Cut each puff pastry sheet into squares.
I sometimes roll them out a bit.


Spoon in about a teaspoon of onion mixture in the centre of the square.
Place half an egg on the top.


Then raise the edges and seal the puff.
You can seal it completely or leave some parts open.
It is up to you.


Brush each puff with the egg wash.
Air Fryer Instructions
Preheat your air fryer at 200C or 390F for about 5 minutes.
Arrange the egg puffs in the basket on top of perforated parchment paper.
Make sure they do not overlap.


Air fry for 4 to 5 minutes at 200C or 390F till the puff pastry is nice and browned and well cooked.


Watch it after 4 minutes. You don’t want it getting too brown.
Take out your egg puffs in air fryer and serve them hot.
Oven Instructions
Preheat oven to 200C or 400F.
Arrange egg puffs on a baking tray lined with parchment paper.
Bake for 10-15 minutes at 200C or 400F or until the puffs are golden brown.

1. Don’t Overfill: It can be tempting to load up on the filling, but less is more here.
Too much filling can lead to the puffs breaking open during cooking.
