This Gluten Free Thanksgiving Stuffing is the perfect side dish for a celebration, packed with chunks of gluten free bread, herbs, celery, onion and garlic. It’s the perfect side dish for a turkey, chicken or nut roast and a staple gluten free Thanksgiving recipe.

  • Why choose this recipe? I love gluten free stuffing with a roast dinner and while I traditionally make stuffing the British way with breadcrumbs, I was totally hooked on this way of doing it. It’s like a savoury bread pudding!
  • Bread of Choice: This recipe works with most gluten free breads, though I find gluten free white bread works best. An unsliced loaf works a treat as you can cut it into the perfect-size cube, or tear it up.
  • Top Tip: The drier the bread, the better this recipe works. If you can, cut the bread into cubes then leave it out (uncovered) overnight to go stale before toasting. It’ll absorb all the flavours so much better!

  • Gluten Free White Bread: I find an unsliced, white loaf works best. In the UK the best result I had was with the Warburton’s gluten free sourdough loaf.
  • Onion, Celery and Garlic: Essential for those big flavours!
  • Herbs: I used fresh rosemary, sage and thyme. You can used dried herbs if that’s all you have.
  • Eggs: This helps to bind the stuffing. Use an egg replacer for a vegan recipe.
  • Butter: Use a dairy free margarine for a gluten and dairy free recipe.
  • Vegetable Stock: I use Knorr stock pots to make my vegetable broth, as are they are gluten free. You can also use chicken stock if you don’t need the recipe to be vegetarian.

Prevent your screen from going dark

  • Preheat the oven to 200C / 180C Fan / Gas Mark 6.

  • Cut bread into approx 1-inch chunks and toss in the olive oil. Spread out over 2 baking trays (so you have one even layer on each) and bake for approx 20 minutes until golden, tossing half way.

  • Meanwhile, add the butter to a large pan and melt on a medium heat. Add the onions, celery and garlic and gently fry for 6-8 minutes until softening.

  • Add the finely chopped herbs and mix well, frying for another minute. Remove from the heat.

  • Once the bread is done, add it to the pan along with half the vegetable stock. Mix well, then pour into an ovenproof dish, pressing down slightly into the dish.

  • Whisk remaining stock and the eggs together, then pour the mixture evenly over the dish. Cover with foil and bake for 30 minutes.

  • After this time, remove the foil and bake for another 10 minutes until the top is golden. Serve hot – see the recipe notes for suggestions of other gluten free side dishes to go with this.

  • Storing: Any leftovers of this gluten free stuffing can be kept in the fridge. Reheat in the oven to eat.
