This Sausage Tray Bake is the perfect one-pan meal, with juicy pork sausages, crispy potatoes, roasted veg and feta, smothered in a Mediterranean marinade. It’s naturally gluten free, super easy to make with minimal kitchen time – and packed with flavour!

The One-Pan Summer Sausage Tray Bake You Need!
- Why choose this recipe? Usually a sausage tray bake seems like more of a winter dish, but with roasted Med veg and a zingy dressing, this is my summer take on this classic comfort food.
- Gluten Free Sausages: Most supermarket sausages are gluten free nowadays, but some of the cheaper brands are still made with wheat rusk. Always double check for a gluten free label – and feel free to use chicken sausages or turkey sausages instead!

Ingredients and Substitutions

- Sausages: Any gluten free sausages will work for this. I usually opt for a plain pork sausage but mix it up with herby or spicy sausages, or use chicken or turkey sausages instead for a leaner version.
- Vegetables: I use a mixture of baby potatoes along with peppers, tomatoes, red onion, mini courgettes and mini aubergines. Feel free to add or change any of the veg for your favourites.
- Feta: You can omit this for a dairy free version but it really adds to the summer, Mediterranean vibes of this recipe. Use vegan feta for a dairy free recipe.
- Marinade: This is made using virgin olive oil, dried oregano, lemon juice and garlic. You can use extra herbs like basil or rosemary, and a garlic paste instead of fresh garlic.
- Mint Yoghurt: I make a simple, minty yoghurt sauce using Greek yoghurt, mint sauce and garlic granules. Use coconut yoghurt for a dairy free version instead.

Storing and Freezing Instructions
TO STORE: Any leftovers of this sausage traybake are pretty good cold – I had mine for lunch the next day with some extra salad. You can also reheat this in the air fryer or oven before eating.
TO FREEZE: You can freeze leftovers but the veg may go a bit soft on defrosting, so I’d recommend reheating in the oven or air fryer to try combat this!

Preheat the oven to 220C / Fan 200C / Gas Mark 6.

Mix together the lemon juice, oregano, garlic and olive oil in a bowl to form the marinade.

Lay the sausages and veg out on a baking tray – you may need to split it between two trays so it forms one even layer. If it’s packed too tightly together then it won’t cook properly.

Drizzle the marinade over the top, mix well and then crumble the feta on top. Bake for 45-50 minutes, turning half-way through.

Mix the yoghurt, mint sauce and garlic granules together and season with salt and pepper. Remove the tray bake from the oven and serve drizzled with the garlic yoghurt sauce.
- Storing Leftovers: Any leftovers can be kept in the fridge or frozen – enjoy them cold or reheat before eating.
- Variations: Feel free to change the veg for any of your favourites, or use full-sized courgettes and aubergines cut into chunks. You can swap the baby potatoes for sweet potato chunks, or the sausages for chicken or turkey sausages.
