Stuffed Dates with Peanut Butter {Snickers Dates}

If I had to eat one sweet thing for the rest of my life it would be Stuffed Dates and Peanut Butter. Crazy right? For all the gluten free desserts, cakes, bakes and treats, these Peanut Butter Stuffed Dates are my one true love. So easy to make, and so deliciously satisfying.

I Almost Love These Dates More Than Pizza

  • BIG WORDS!! If you know me, you’ll know my favourite food 🍕 – but honestly I can’t get enough of these Peanut Butter Stuffed Dates. I genuinely eat these every single day and have done for maybe the last year-or-two? I am obsessed. They are gluten free, so delicious, and super quick to make.
  • Fibre Rich: Fibre seems to be a bit of a buzzword at the moment but if, like me, you have coeliac disease, it’s important to have enough in your diet. These medjool dates stuffed with peanut butter and coated with chocolate are kind of like a healthy, gluten free, fibre-packed Snickers bar.
  • So Versatile: Do you fancy milk, dark or white chocolate? Peanut butter, almond butter, pistachio butter, cashew butter, tahini…? Honestly the list of how you could customise these stuffed peanut butter dates is endless.
  • Anything else? If I haven’t convinced you yet that these Snickers Dates are the best thing ever, you’re just going to have to take 5 minutes to make them and see for yourself. Yep, that’s literally all the time you need to make them!

Ingredients and Substitutions

There’s a printable recipe card below for these Stuffed Dates with the full quantities. But here are the main ingredients and ideas for any swaps.

  • Medjool Dates: Any other date just won’t cut it. Medjool dates are big and fat and sticky and so caramel-y, so make sure you use them!
  • Peanut Butter: My ultimate favourite is crunchy peanut butter, but of course use smooth if you prefer. You can also use almond butter, cashew butter, any other nut butter, or even my homemade pistachio cream. And for a nut free version, use tahini.
  • Chocolate: Milk chocolate gives these a real ‘Snickers’ feel, but you can happily use dark or even milk chocolate. Use a vegan or dairy free chocolate to make these vegan.
  • Sea Salt Flakes: Optional, but trust me, this takes the flavour to a whole new level. Plus let’s face it, it looks a little bit fancy, so that makes me happy.

How to Make Stuffed Dates with Peanut Butter

There’s a printable recipe card below with the method. But here are some step-by-step photos to show you how easy these stuffed dates with peanut butter are to make.

First, break the chocolate into small pieces and add to a heatproof bowl.

Either melt slowly over a pan of hot (not boiling) water, or microwave in 20-second intervals until completely melted and smooth.

Cut the dates in half lengthways (without cutting all the way through) and remove the stones.

Fill the dates with a teaspoon of peanut butter each. Then dip each date in the milk chocolate, using a fork to coat them and drain off any excess chocolate.

Pop the dates on a board or plate lined with parchment paper and sprinkle with a few salt flakes each. Place in the fridge and chill until set.

To Store: I personally like to keep these in the fridge so the chocolate doesn’t melt.

My Top Tip

Keep these stuffed peanut butter dates in the freezer to take them to the next level!! Remove from the freezer 5-10 mins before eating, you won’t regret it. SO good!

  • Storage: These are best kept in the fridge so the chocolate doesn’t melt. They’ll last a week-or-two – if you can resist them that long!
  • Variations: Feel free to change the chocolate to dark or white chocolate, or use dairy free. You can also use any nut butter you like, or tahini for a nut-free recipe.
